Soft, fluffy and impossibly delicious banana bread cottage cheese pancakes perfect for dessert or brunch. Top with yogurt, nut butter, and fresh berries.
Ingredients
1 Whole
Medium banana
1 Tb
Generous heaped tablespoon cottage cheese
2 Tbs
Heaped tablespoons of plain flour
1 Whole
Medium egg
1/2 Teaspoon
Baking powder
1 Pinch
Salt
20 Grams
Dark chocolate, cut into chunks
Whole
Yoghurt, nut butter and berries for serving

Nut butter for serving

Fresh berries for serving
Instructions

Mash the banana.

Mix with an egg, pinch of salt, and cottage cheese until combined.

Fold in the flour and baking powder.

Fold in the chopped dark chocolate.

Heat a nonstick frying pan over a low/medium heat, spoon the mix to form small equal sized pancakes.

Cook for 3 minutes, making sure they don't burn.

Flip and cook the other side for 2-3 more minutes.

Pancakes should feel light and springy to touch.

Serve with thick yoghurt, a drizzle of peanut butter and fresh berries.
