Panang curry~~~ ayyyyyyy Difficulty is not hard, it just takes time to cook
Ingredients
Tofu
As much as you want!
2 Peppers
Red, orange, yellow peppers
Garlic
As much as you want! We use A LOT!!!!
1/2 Onion
Onion
1/2 Can
Panang curry paste
We got ours from H mart
Heirloom tomato
Honestly, I feel like this is optional, we just happened to have an heirloom tomato :)
Shiitake mushrooms
Also optional but so yummy!
2-3 Cups
Coconut milk
1 Cup
Water
2 Cups
Rice
Instructions

Press tofu to dry it. We put it between two plates and papertowels ontop of the tofu with something weighing it down.

Prep vegetables. Cut into 1-2inch pieces. Mince garlic.

Heat up vegetables Garlic --> Onion --> Peppers, etc. Season with salt, garlic powder, black/white pepper.

Bake tofu Bake after coating with corn starch and salt. You can also just cook it with the curry without baking first.

After veggies are almost done cooking, add coconut milk and curry paste. Stir, and then let it cook for 30-45 minutes.

If you baked the tofu, add it to the curry once it develops a crust.

While the curry is cooking, cook your rice.

Remember to taste your curry while you cook, and adjust flavoring to your taste. Once the curry has cooked for 30-45mins, serve with rice.
