A delicious and hearty soup featuring Italian sausage, gnocchi, vegetables, and creamy coconut milk.
Ingredients
1 Pound
Italian sausage
10 Ounces
Gnocchi
2 Mediums
Carrots
1 Whole
White onion
4 Cloves
Garlic
4 Cups
Chicken broth
1 Can
Diced tomatoes
1 Tb
Tomato paste
1 Teaspoon
Oregano
1/2 Teaspoon
Salt
1/4 Teaspoon
Pepper
1 Pinch
Red pepper flakes
2-3 Cups
Shredded kale or spinach
1/2 Cup
Cream or coconut milk
1 Whole
Parmesan rind
Instructions

Bring a large pot over medium heat, add olive oil and sausage and cook until almost cooked through.

Add onion, garlic and carrots and sauté until onion is translucent (about 5 minutes).

Mix in the spices and tomato paste, then pour in the tomatoes and broth.

Drop in the Parmesan rind, if using.

Bring to a boil then add the gnocchi until cooked through (3-4 minutes).

Reduce heat to medium low, add the milk and kale and stir until wilted.
